The Reverse Pro-Am is our first Club Competition of the Year
The Reverse Pro-Am takes a commercial scale beer from a local brewery and FOAMers must downscale it to a 5-10 gallon batch and brewers from that brewery come and judge them at the January meeting.
The recipe is the actual one used for brewing the commercial batch. Brewers have to determine the ratios to downscale to a homebrew sized batch.
The commercial beer for the January 2025 meeting is Marshall Brewing Company’s Kölsch.

Marshall Kolsch (17 BBL)
Grain bill:
Pilsner malt 687.5 lbs
CaraFoam 55 lbs
Pale Wheat malt 55 lbs
Honey malt 27.5 lbs
Mash in volume: 12.0 HL
Mash in at 122°
Raise mash to 149°F (Hold for 20 minutes)
Raise mash to 155°F (Hold for 10 minutes)
Mash out at 173°F (Hold for 10 minutes)
Hops:
Cascade @ 60 min (2.5 lbs)
Cascade @ 30 min (2.5 lbs)
Cascade @ 5 min (2.5 lbs)
Yeast:
House Ale yeast or California Ale
Beer Details:
Ferment at 68°F
Target OG: 11.8-12.2 °Plato
Target FG: 2.4-2.8 °Plato
Target IBUs: 15
Target SRM: 5
Target ABV: 5%
